Day 1 of my Whole 30!

BREAKFAST: 2 HARD BOILED EGGS, 1 AVOCADO, AND HOT COFFEE WITH ALMOND MILK

SNACK; GALA APPLE , 32 OUNCES WATER

LUNCH: TOMATOES STUFFED WITH BUFFALO CHICKEN, W/32 OUNCES OF WATER

2 CELERY STALKS with 2 Tbl almond butter

DINNER; BBQ PORK LOIN, CARROTS (kerrygold butter and cinnamon) AND SWEET POTATO (kerrygold butter)

RECIPE
BBQ PORK TENDERLOIN
Preheat oven 350
Cook 30 min.

2 1/2 lb Pork Tenderloin
2 tsp Salt
1/2 tsp Pepper
1 tsp Cumin
1 tsp Chili Powder
1 tsp Cinnamon
2 Tbl Coconut oil

Mix all spices together, rub all over both sides of Tenderloins
Melt Coconut oil in oven proof skillet
Brown both sides of tenderloins approximately 4 minutes all together.

BBQ Sauce
3/4 cup Tessemea’s BBQ
1/8 cup Coconut Aminos
2 Tbl of Crushed Garlic

Mix ingredients together
Coat both sides of tenderloins

Bake in same pan for 20 minutes. Baste pork with liquid in pan continue to cook 10 more minutes. Slice at an angle.

This recipe was so delicious I could have just eaten the pork and nothing else.

Pretty successful Day 1 I would say except I was starving by 3pm, hence the celery and almond butter before dinner.
