Hello Fall.  We are entering the season where many confections increase in their prominence.  Pumpkin Spice, Caramel and Peppermint are everywhere from now to December.  Must a caveman shun all these traditional treats?  Is there some “paleo-ness” to be found?  Let’s take a look at caramel.

What is Caramel?

Caramel is a sticky, sweet confection made by heating sugar at a high temperature. This process is what gives caramel its distinct dark tan color and rich flavor. Caramel is used in candy, as a sauce for ice cream and baked goods, and also as a topping for apples or desserts like crème brulee.
