Happy Columbus Day!!!! Today felt like a Sunday to me. I had another first today. I cooked short ribs for the first time. I chose the crockpot because I knew I would be out and about today. Well let me just tell you they were scrumptious. It was the Perfect fall “Sunday” dinner.

Crockpot Short Ribs

5lbs Boneless Beef Short ribs
1 Tbl Himalayan Pink salt
1 Tbl coffee grounds
1 tsp cinnamon
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1tsp smoked paprika

1/4 cup coconut aminos
1/4 cup honey
3 tsp apple cider vinegar
8 oz tomato paste

1 Tbl bacon grease

Mix all dry ingredients together. Rub on both sides of meat.

Sear both sides in a skillet with bacon grease.

Place pieces in crockpot. Cook on low for 6-8 hours!

Mix wet ingredients well and pour over the ribs.
