Over the years my taste has changed. I have learned about many different cuts of meat that I never really ventured to try. It seemed all the years raising my babies, I just thought I was keeping it simple with chicken breast, steak tips, pork chops and pasta. Wow, never did I realize all the different cuts of beef and pork you could buy.

Did you know that Pork has particular high level of the following vitamins and nutrients – protein, zinc, phosphorus, selenium and various B vitamins.
As with any other meat, protein is a great nutrient to help aid in weight loss. Our body burns more calories to digest pork or any other meat. The more protein we eat, the more calories are body uses to digest the pork and the more fat we lose. Zinc is an important vitamin that helps promote cell growth and boosts a body’s immune system. Phosphorus is known to help build strong teeth and bones. Selenium helps protect blood vessel walls from being damaged.
B vitamins are also very important, in fact, meats are one of the most common foods that naturally have various B vitamins in them. It is a well known fact that people who choose a vegetarian or vegan lifestyle, meaning they do not eat meat or dairy products, must take B vitamin supplements in order to get the needed B vitamins that their bodies need because they are very few other foods that naturally contain B vitamins.
Pork can be enjoyed in many different ways, from chops to nuggets or ground pork can be substituted for beef in almost any recipe. It’s a little bit leaner than ground beef, but has the same benefits as beef does.
Preparing pork is also as important as what cut you choose to you. When cooking pork, just as with any other meat, you must make sure that the interior temperature of pork reaches at least 160 degrees in order to kill any bacteria that may be present in the meat.

My favorite cut is the Pork Filet or pork tenderloin which I guess is the same thing.

I made a delicious Bacon Tenderloin the other night.

2 lb pork tenderloin ( usually 2 one pound loins to a package)
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp Adobo seasoning
1 1/2 tsp smoked paprika
1-2 sprigs of thyme (clean leaves off the sprig) or 1 Tbl dried thyme.
1/4 tsp chili powder
1 Tbl Fresh minced garlic

6-8 strips of your favorite bacon
2 Tbl Honey

Mix all spices together well, including garlic
Rub each tenderloin completely back, sides and front until well seasoned.
Wrap bacon around tenderloin
Drizzle with honey

Bake on 375 for 40-45 min.

Pair up with a great roasted veggie

Parsnips
Orange sweet potato
White sweet potato
Gala apple

Peel all and cut into pieces,
salt & peeper to taste
1 tsp smoked paprika
1/4 cup melted Kerrygold butter
Mix all well

Bake with roast 30 min
