Lemon Shortbread Cookies

1½ cups blanched almond flour
¼ teaspoon salt
¼ teaspoon baking soda
1 tablespoon lemon extract
2 tablespoons Ghee
3 tablespoons honey
1 package sprinkles

In a food processor combine almond flour and salt
Pulse in baking soda
Pulse in shortening and honey and lemon extract until dough forms

Scoop batter 1 tablespoon at a time onto a greased baking sheet
Flatten dough with the bottom of measuring cup

Bake at 350° for 7 minutes until golden brown
Let cool on the baking sheets

Glaze
2 cups Organic powder sugar
3 Tbls Orange juice
1 tsp lemon extract

Heat sugar, Oj and extract till thin glaze.
Brush lightly on cookies
Cover with sprinkles if desired

Place cookies on baking sheet
Serve
Makes 12 cookies
