Oh yes, Chipotle at home! This is a little different than my last recipe which was for the slow cooker, this one slow roasts in the oven instead. We love Chipotle, but going out to dinner is not always an option and I am all about replicating recipes at home! Cue Make-Your-Own Burrito Bowl Night!

First, a sneak peak…

INGREDIENTS (ABOUT 8-10 SERVINGS)

3 lbs pork shoulder or 3 lbs chuck roast
1 tablespoon coconut oil
1/4 teaspoon cumin seed, crushed slightly
1 onion, cut in half then chopped
3 garlic cloves, peeled and chopped
1 (14 ounce) can diced tomatoes
2 sprigs fresh oregano (can substitute dried, about 1/2 tsp?)
2 whole cloves
1 -2 bay leaf
2 chipotle peppers in adobo sauce
1 tablespoon adobo sauce
1/2 c broth made with Anne’s Vegetable Base (or make your own, choose your own)
salt and pepper
