SPOILER ALERT: This is probably my favorite Paleo recipe. EVER. I couldn’t stop eating it.


Although it was difficult to take a decent picture of it, I am beyond confident in this dish. The flavors just mesh so well. The crunch of the pecans…the sweetness of the sweet potatoes…the protein…I’m getting emotional. I need to make this again. Very soon.

Paleo / Gluten-Free Maple Pecan-Topped Sweet Potatoes with Chicken


  • 2 large sweet potatoes
  • 2 large boneless skinless chicken breast, ground
  • 1 medium sweet onion, diced
  • 1/2 tablespoon olive oil
  • a pinch of salt
  • a pinch of black pepper
  • 2 tablespoons pure maple syrup, separated
  • 1 teaspoon McCormick Smokehouse Maple Seasoning
  • 1 cup finely chopped pecans
  • 1 teaspoon cinnamon
  • 1/4 cup melted coconut oil
