Hearty polenta can be found on Italian menus around the world, and it seems like it might be a hearty alternative to all the white pasta on the menu. However, what exactly is polenta, and is it Paleo?

What is Polenta?

Polenta is an Italian porridge, made either sweet or savory, often served as a side dish or with a hearty helping of sautéed onions, mushrooms, or other vegetables. Polenta can be made from a wide array of grains, but it is most traditionally (and technically) made from ground corn meal. It is also commonly baked or fried to add another layer of texture, but the first step is to make it on the stove with water, much like you would oatmeal or farina.
