Well hello all!  Hope you all had a fantastic Tuesday.  How did you all eat today? Were you able to stay on track? Today I only managed to have breakfast and dinner. I was extremely busy and forgot about lunch.  Needless to say that does not happen all that often, I usually am watching the clock waiting for the next meal. LOL

Breakfast:

Hard Boiled egg, 1/2 avocado, 2 pieces of bacon and a cup of fresh pineapple (which was extremely juicy and delicious)

Dinner: Pork Chops smothered with apple, onion and mushrooms, small sweet potato and some peas.

Snack to come: Pretty and Paleo is making me a smoothie.  I can’t wait.

Smothered Pork Chops

  • 4 Pork Chops (bone on or off)
  • 1 Apple sliced
  • 1/2 Vidalia sweet onion
  • 2 Cups mushrooms
  • 6 tsp. of kerrygold butter divided
  • 1/2 tsp. apple cider vinegar
  • 1 tsp. cinnamon
  • 1 tsp. each of the following;
  • chili powder, garlic powder, onion powder, salt & pepper

Mix all seasoning together and evenly coat both sides of chops.  Melt half of the butter in skillet, fry up chops approximately 15 minutes turning half way through to brown evenly.  When cooked through remove to a plate, add the remainder of the butter to skilled and melt scrapping spices from pan add in the add apple cider vinegar and cinnamon , mushrooms, onion and apple slices, bring to slight boil, lower heat and cover cooking approximately 10 minutes.  When complete smother those chops you set aside and devour them. 

So very good.
