Of the many things I prepared today for the week this was one.

Pre-Heat oven 350

Vegetable Quiche Muffins

  • 1 small onion
  • 1/4 cup chopped spinach
  • 1/4 cup chopped broccoli
  • 1/8 cup shredded carrots
  • 1/8 cup cabbage
  • Salt & Pepper
  • 8 Eggs

Sauté onions in bacon grease until translucent,  add vegetables cook until tender add salt & pepper

Mix eggs until scrambled and add your vegetables

Ladle evenly into your muffin cups

Place in to preheated oven for 35 minutes.
