Today was a good day, all my prepping this weekend made for delicious meals today.

Breakfast: Mexican Hash Egg Bake

Snack: fruit salad

Lunch: Lobster Salad

Snack: hand full of almonds.

Dinner: Grilled chicken, sauté spinach that I bought at the farmers market this weekend, sauté zoodles (my new favorite side dish) and sweet potato


Last night while we slept, my short ribs cooked in the crockpot.

Asian Marinated Short Ribs

We will have these for lunch tomorrow.
