Grilled Salmon with Salsa

It was time to get creative with my Whole 30 lunch. Tomorrow I start Day 20. Because we would be eating it cold, I thought salsa would be great to pair it with.

2 Pieces of Salmon
1 tbs coconut oil
1 tsp salt
1 tsp ground cumin
1 tsp smoked paprika powder
1 tsp onion powder
1 tsp garlic powder
½ tsp chili powder
1 tsp black pepper

Avocado salsa:
1 avocado diced
1/2 cortland apple
1/2 small tomato diced
1/4 cup diced red onion
Juice from 2 lemons
2 Tbs finely chopped cilantro
Salt to taste

Or if you dislike avocado like my hubby

Apple Salsa
1/2 cortland apple diced
1/2 small tomato diced
1/4 cup diced red onion
Juice from 2 lemons
2 Tbs finely chopped cilantro
Salt to taste

INSTRUCTIONS
Mix the salt, chili powder, cumin, smoked paprika, onion , garlic and black pepper together, then rub the salmon fillets with melted coconut oil and then generously rub seasoning onto filets, refrigerate for at least 15-30 minutes.

Pre-heat the grill.

Combine all ingredients of the salsa you prefer. My husband dislikes avocado so I had to make a variation of mine for him.

Grill the salmon to desired doneness. Approximately 8 minutes skin side down.

Finally top with your favorite salsa!

Pre heat oven 350

2lbs Chicken Breast
1/2 Cup Tessemae’s Southwestern Ranch
1/4 Cup Homemade Mayonnaise
1-2 Cups Unsweetened Coconut flakes
1 Tsp Onion Powder
1 tsp Garlic Powder
1 tsp Salt & Pepper

I like to filet my chicken so that they are not too thick to cook. Lately the breasts I get are huge. So I just filet in half like a cutlet.
Make sure the Southwestern ranch is shaken well so all the spices blend.
Mix ranch, mayo and spices together well
Dip chicken pieces into mixture coating both sides.
Then dredge in coconut on both sides
Place on a pan lined with parchment paper
Bake 40 minutes or until golden brown and cooked to the perfect moistness.

These were delicious. It was a last minute throw together that paired perfectly!!!! Then I added a half of a sweet potato and some carrots.

Crispy Thyme Chicken

Crispy Thyme Chicken & Asian Broccoli Slaw

Crispy Thyme Chicken

4 Lbs Chicken Thighs with Skin
2 Tbl Thyme
2 Tbl Onion Powder
2 Tbl Garlic Powder
1 Tbl Smoked Paprika
Salt & Pepper
Coconut Oil

Mix spices all together well and set aside.
Rinse and pat dry all chicken pieces
In a large skillet melt 4 Tbl coconut oil
Evenly coat chicken thighs with spices on both sides
Fry chicken skin side down for 10 minutes making sure to move pieces around every 2-3 minutes so it doesn’t stick to the pan
Once you reach a golden brown color remove and place onto a rack which is placed on a cookie sheet
When all done frying place in a pre heated 350 oven for additional 30 minutes.
Enjoy!

Stir Fry Veggies

Yup this is the start of Day 4!!! So far so good. I don’t have the normal sign for Day 4 and I will not mention what that symptom is so that I don’t jinx myself. LoL

Stir fry veggies go a long way!! You can Sauté some up and use over and over. I made a batch for steak stir fry for Friday nights dinner, then I had the veggies in an omelet Saturday morning and now just heated the remainder in a bowl and added an avocado for breakfast. Delicious.
Make your Whole30 as simple as possible.
Prep for the week as much as you can. Here’s a few simple ideas;
🔹Slice and dice veggies and portion out into baggies then freeze or keep in fridge.
🔹Make a batch off egg muffin quiches for grab and go breakfast.
🔹Grill up some chicken and beef to have on hand.
🔹Plan your meals for the week, this makes shopping easier and less to think about during your busy week.
🔹Stick to your grocery list.

The Hangover.

The last couple of hours I have felt wicked sluggish. Feeling like someone drugged me. And then I remembered the timeline…
What day are you at on Whole30? Are you feeling tired, hungover or like hurting someone??

Everyone is different so everyone will experience different affects.

I can’t wait to reach 12-15. I have no time to be tired.
All and all It’s been a pretty good Day 2 for me. I wasn’t as hungry as yesterday and felt pretty satisfied most of the day. There was one point I had a hankering and it was when I was driving a distance and wanted a piece of gum. (I usually chew gum on and off all day, yes I know not a good idea but it keeps satisfied. It’s something I have done since I quit smoking). I reached for it then realized shit… there is sugar in it. Damn…. Thank goodness I had cashews I had about 15 and this seemed to do the trick.
You too will need to find healthy alternatives when urges arise for the wrong choice.

Today was weigh/measure in day!!!

This is how much weight I figured I gained a week this past year!
For a total of 18lbs. No I’m not proud of it! No I am not defined by a number on the scale. But with the scale# came higher inches on my hips and my waist!!! Those are not cool!!!

I do not feel defeated, I did however slowly feel like crap over the past 6 months. I found I was eating outside of the Paleo box and mostly with snacks! This unfortunately is all part of my sweet addiction that I’ve had my whole life.

My first year Paleo I did amazing and had amazing results because I was dedicated and focused. Then I think I got too confident. I thought that I could keep myself on track. But then I would let myself slide here and there. I figured it would all be ok because I would always fix it with a Whole30 Omg thankfully I did, if I hadn’t I probably would have gained so much more than I did.

Thankfully I have learned enough of the fundamentals and had enough discipline to not completely derail. It’s Crazy I can eat every meal on point! I will not waiver and have exactly what I should for each meal.
Then I go to work….
and there is practically a bowl of candy in every office or someone is bringing in baked goods. My brain knows I love sweets damn it!!! I got weak.

Well Im not stupid I know that I need to be more disciplined with my habits. I’ve been strict, I have learned so much in a few short years about how to treat my body. I know what to do.

So here I am, starting a Whole90!!! I figured I started Paleo with a 90 day stint of Whole30 I can do it again.

I am worth it…my body is worth it…and my hubby and I are going on tropical vacation this year finally.
I want to look good.

Spicy Sweet Potato Hash

Ingredients:

3 Large Sweet Potato’s (I used 1 Japanese Red sweet and 2 regular sweets)
1 small Vidalia Onion
1 Granny Smith Apple
1/2 pound of Nitrate Free Bacon
1 Tbl Simply organic Garlic N Herb Seasoning
1 tsp. Smoked Paprika
1 tsp. Himalayan Salt
t tsp. cinnamon
1 tsp. Red Pepper Flakes
1 tsp. of coconut oil

Wash and cube your potato’s and set aside
Dice your onion, apple and bacon
Sauté the bacon until almost done, then add the onion cook until translucent
next add your apple
When apple is almost cooked add your potato and spices, add coconut oil helping to keep all from sticking to the pan.
Mix well cook medium heat stirring occasionally making sure it doesn’t stick to pan cover and cook for 30 minutes until potato’s are tender.

DELICIOUS! We had this for breakfast this morning with fried eggs and a side of fruit.

Dear lord let me get through the next 5 days.  My sweet tooth craving is super crazy!!!!  Seems every where I turn I see chocolate, it seems to be dancing in my head.  🙂 

Exciting things are happening for me, I have been bursting at the seams trying to keep it all in.  I recently gave my notice at my job and I will be going back to my old company.  I couldn’t be more excited about it. The job is something I had only hoped for years I would get and never thinking it would happen.  I am a true believer that everything happens for a reason and exactly when it should.  So that’s happening and I am going to be a g-ma In about a month for the first time. I am on vacation next week which means W30 restart will be put on hold for a week. LOL So all is great with the world right now.

Today I had a bunch of Barbacoa left over that I refused to let get wasted.  This morning I had a vegetable quiche with a lil bit of it on the side. Then this evening I sautéed some mushrooms and onion and heated it up with the barbacoa and had some kick ass asparagus on the side.  It was super delicious.  I will definitely be making that recipe again soon.  It gave me enough for 3 meals this week.

Today was a good day, all my prepping this weekend made for delicious meals today.

Breakfast: Mexican Hash Egg Bake

Snack: fruit salad

Lunch: Lobster Salad

Snack: hand full of almonds.

Dinner: Grilled chicken, sauté spinach that I bought at the farmers market this weekend, sauté zoodles (my new favorite side dish) and sweet potato

Last night while we slept, my short ribs cooked in the crockpot.

I ended Day 21 trying something new.  Fiddleheads…..These funny little spiral looking things are very new to me. Until this week I had never heard of them.  I was a bit hesitant to try these little buggers.  The taste was a cross between broccoli rabbi and spinach for me.  I roasted them with minced garlic, salt and a tad bit of olive oil and then last minute I mixed it with some left over broccoli, along with a burger smothered in mushrooms, sweet potato fries and broccoli slaw. (realized after I plated everything I had a lot of broccoli tonight. 🙂

Fiddlehead greens are the furled fronds of a young fern, they are harvested for use as a vegetable. Left on the plant, each fiddlehead would unroll into a new frond. As fiddleheads are harvested early in the season before the frond has opened and reached its full height, they are cut fairly close to the ground. The picture below is what they look like not mixed with anything.

For those of you watching your carbs they have 5.5 grams of carbs.

Beware if you look them up on the internet.. I looked them up and the first website I clicked on, well lets just say it wasn’t about the vegetable fiddlehead.  OMG parents be advised when your children lookup fiddleheads.  Then I came across the  PaleoHacks one and there I find out that they could be toxic. Ok well I guess I am a little late because we ate them.  Although apparently this is only if eaten raw or picked from the wrong place. LOL yea I might not be having those again.
