My head is in the game and I am feeling great again.
My meals have been mostly planned out and when they are not I do my hardest to stay on target. I have been working out daily for the past week with Jillian and loving… well hating and loving every minute of it. LMAO
I like most have wished that one day I would wake up and just be happy, successful and fit. I wished that I was not “the one” that always had to work so hard to get it. I learned along the way, you don’t get what you want in life, relationship, fitness or career unless you WORK YOUR ASS OFF to do so. We are the makers of our life. Therefore we, ourselves have to do the work. Well I am a constant work in progress that is for sure. But this girl will not give up. I am fortunate to have so much good in my life, I need to take care of me so that I am around forever to enjoy it.

Happy Rainy Friday from Beantown. We are expecting torrential rains all weekend.

On a side note: My oldest sister is in the hospital with intestinal issues and it is a wait and see game whether she needs to have surgery. This is not what we want as surgery is scary enough but she does not handle anesthesia well and it causes complications. So please take a moment to say well wishes for her to recover without it.

Feeling Good

Just checking in with you all so you know I am still on track.
It’s been a couple of weeks now and I am feeling so much better about myself. I started eating pretty strict again. I feel like my anxiety has definitely eased up and I am so thankful for that. I haven’t varied off my eating plan at all. The worst I do is have my tequila and soda water on the weekends if we go out. I added the tiniest kerrygold cheese to my burger this week and my steak bomb filled peppers tonight. My belly doesn’t feel as bloated from the gluten and crap which I was eating before. I have a lot of making up to do, but I am moving in the right direction so I am super happy. ūüôā
Monday started day one of exercising again!!! YAY me for not giving up and moving forward. I had some serious back spasms last week that I had to work on with some massage therapy and it has definitely improved. I have a few recipes I will be posting this weekend for you. Good Night for now.

Paleo grocery list

Thought I would repost this because it is super helpful. So here you go.
How do I shop for Paleo ? What do I buy? How Do I prepare the food? Isn’t it a lot of work?

With everything else in life to succeed at something we need to have some plan to get us started as well as a little bit of knowledge as to what it is about. Then we can move forward .

First you need to know what Paleo is. Robb Wolf is the man and he will give you what you need to know.

Then just to get you started Caveman Strong offers a starter grocery list. Many times people will ask me to write one up for them, this is a great starter list. Of course switch up the items you don’t like for something similar, we all have different tastes.

Take what they offer and put into something that works for you. Just follow the principles of the a Paleo lifestyle and you will be fine.

Time-out

Please don’t think I have abandon you.¬† I have been out of control health wise lately.¬† My anxiety/emotions have been a bit crazy since April 20th! I have been trying to regain a sense of normalcy again and it is taking me a bit longer than I even expected. Some days just trying not to have a full-blown panic attack is a chore. For those of you who don’t know I have battled with anxiety and depression for my whole adult life. Hence my eating issues as well.¬† I have had it under control with minimal issues for the last 7 years, and then of course eating Paleo the past 2 years, has been amazing for me.¬† I haven’t had to take any anti anxiety or anti depressant daily for 7 years.

Well, April 20th, my 22 yr old son was in a really scary accident that could have taken his life.¬† Thankfully we were blessed with a miracle because he came out of it just scared and with scars¬†from broken glass.¬† On 7/18 guess what…yes he was in another stupid car accident, this time just a fender bender.¬†¬† I need to be honest…¬† he was playing with his stupid phone adjusting his music and this is what caused¬†both accidents.¬† Thankfully now he is on foot and not behind a wheel (well maybe just a ten speed) for a while!¬† You can imagine how this has affected me as a parent. I am so happy he is alive and well and that Nobody else was hurt from it. And then of course I just want to slap him silly.¬†¬† I relive the night of the first accident in my head over and over. I have the accident scene and his burning car stuck in my brain because I drove up onto it, luckily he was out of the car at that time.¬† Weeks went by and I thought I was ok. Then I realized my anxiety would hit me like a ton of bricks out of no where. Then I realized I was food soothing and I still am.¬† I am working very hard to get back on track and working really hard to stay off anti anything pills.

I guess I am telling you my story because this helps me to work on me. I am not perfect, I am human and just like anyone else out there.¬† I know what I need to do, it’s just getting there to do it.

I know some may want to judge my son and I would understand if they did, but he is one of soooo many people who have and still do get distracted by their phone, radio, eating, smoking, talking etc.  I believe he knows how luckily and blessed he is now.  He is suffering the consequences  without a car and having to take classes and possible lose his license for a while.  He will learn by his own mistakes and I am sure it will make him a better person in the long run. As his mom I can only hope he does right???

I’ve just needed a time out for me.

Please I encourage you all to keep drilling into your children’s heads to NOT use their cell phones while they are driving. I encourage you as adults to put your phone down and drive your car. It only takes a second…a split second.

Asian Chicken & Scallions

2 servings

2 lb Chicken breast
1 Cup chopped scallion
1 Tbl minced garlic
1 tsp fresh minced ginger
3 Tbl Sesame oil
4 Tbl Coconut Aminos
1 Whole lemon
1 tsp onion powder
Salt and pepper
2 Tbl toasted sesame

Trim and slice chicken in half. Put sesame oil in heated pan
Salt and pepper chicken and place chicken into heated oil
Brown both sides
Add all other seasonings except coconut amino, lemon juice and sesame seeds
Sauté with chicken filping to evenly brown until firm and pink is almost gone
Add coconut Aminos and squeeze all the juice from lemon over chicken. Cover and cook 10 minutes.
Remove chicken from pan and add approximately 1 tsp arrowroot quickly stirring until sauce thickens.
Add chicken back to pan and cover in sauce

Serve and enjoy~

There are so many benefits to drinking tea. I personally drink about 3-5 cups a day. My most favorite tea is “Green Oolong”! This tea is by far the smoothest tea, without the bitterness. Take a look at the benefits of each below.

Paleo Sandwich Bread

Heart ~Healthy~Hearty~Loaded Sweet Potato

Ingredients

1/2 Pound ground beef
1 egg
1 Sweet potato
1 Cup Baby Bella mushrooms
4-5 Slices onion
1/2 Cup Frozen spinach
1 tsp Onion powder
1 tsp Garlic powder
1/4 tsp Cayenne pepper
1 tsp Salt
1 tsp Pepper
2 Tbl Bacon grease, coconut oil, or Kerry gold butter

Sweet potato, I either cook ahead of time and heat up when needed or microwave 1 small potato for 6 minutes while cooking mixture.

Sauté Mushroom, onion and frozen spinach in 1 tbl grease, oil or butter on medium heat to burn off any water coming from frozen spinach. Add in ground beef, onion and garlic powder, cayenne, salt and pepper. Stir mixture until beef is fully cooked.

After beef mixture is completely cooked, transfer to a bowl, heat additional 1 tbl of grease to pan and fry your egg.

Split hot sweet potato and place fried egg on sweet potato, add beef mixture to top off sweet potato. Add Siracha or hot sauce of choice if you choose.

Who says your loaded potato has to be with bacon and cheese. This was far tastier and healthier than any loaded potato I could have gotten out at a restaurant.

Breakfast is my most favorite meal! It starts my day in the right direction when I start it with the right fuel for my body.
I love making these lil muffin quiches. They are super easy to make and great take along meals.

8 Eggs
2 cups Spinach
1-6 oz Leidys Natures Tradition (uncured no nitrate ham steak)
1 Tbl garlic
2 Tbl Kerrygold butter or olive oil.
1 Tbl Pepper
1 tsp Salt

Sauté garlic in oil or butter. Add spinach toss lightly cooking approximately 5 min.

Scramble eggs, add salt and pepper

Chop ham into bite size pieces add to egg mixture along with spinach

Spoon evenly into muffin tin. I use large muffins (6) and a small soup ladle and pass around the tin twice. This usually uses the whole mixture.

375 oven 30-40 minutes.

This usually is 3 servings if served alone. If I am pairing it with other sides one muffins will do making it 6 servings.

Kombucha

Ahhh my new love in life. I feel like I’m splurging when I sip a cold brew of Kombucha. Then I realize two simple facts;
1. I brewed it so it didn’t cost me $3+ dollars a bottle
2. It has a high concentration of vitamins B and digestive enzymes, so drinking kombucha tea can alleviate a number of ailments.

Therefore I guess I am splurging on myself and my health. ūüėÉ

I like to try a different variety of flavors with my brew. Today I split up my batch and I am making one with Fresh lemon juice and blueberries. And the other with Peaches and Ginger. I can’t wait until I can taste each one.

Have you ever tried making your own it’s super simple.
All you need is Organic tea, organic sugar, water and a scoby.

Scoby??? What is that you say….
Well a scoby is basically a colony of bacteria and yeast. All good bacteria of course.
If you don’t have a friend who can give you a scoby to start here is how to make one yourself.

1 bottle of Organic, Raw Kombucha
1 glass jar
1 kitchen towel
1 cup of room temperature sweetened tea made with filtered water

You can buy the kombucha at just about any health food store. I get mine at Whole-foods when I need it.

Pour the bottle of Kombucha and sweetened tea into a glass jar. Cover it with a towel so it can breathe but be protected from insects and other contaminants. Let it sit.

With time, a new SCOBY will start to form on top of the liquid. It will appear first as a thin film, then slowly fill in and thicken up.

Hooray now it’s about 1/4 inch thick, and it’s ready to go. You can let it sit longer and get even thicker, but that’s really not necessary.

Now your ready to brew your own batch.

You will need:
A gallon size glass jar.
1 gallon (or a little less) of brewed sweetened tea, with a ratio of 1 cup organic sugar to 1 gallon of tea ‚Äď must be cooled t room temperature!
1 Kombucha SCOBY
a kitchen towel or coffee filter and a rubber band.

Prepare the tea (1 cup organic sugar in 1 gallon of brewed regular tea
Use 8-10 tea bags per gallon
Let the tea cool and remove tea bags. Make sure that tea is completely cool before going on to next step.
Pour the tea into a gallon size glass jar, leaving at least an inch of room at the top.
Add 1 cup of liquid from a previous batch of Kombucha or from a store bought bottle of plain organic Kombucha.
Gently place the Kombucha SCOBY at the top of the liquid. It should float, but don’t worry if it doesn’t. Once you have put it in, don’t stick your hands into the tea to get it to float!
Cover the jar with a towel or paper towel is what I use and secure with a rubber band.
Place in a warm location (around 70-75 degrees) and let sit from 5-30 days depending on your preference (it will be less sweet and more potent the longer you leave it).
When it is finished brewing you can store in smaller jars or in another big jar with a lid and repeat the brewing process with the SCOBY to make more batches. Every 1-2 batches, the SCOBY will have a baby that can be used to make other batches or given away.

Enjoy and start experimenting once familiar with the process.
